Vegan Spiced Oatmeal Raisin Cookies

This spiced oatmeal raisin cookie recipe has been a long time coming. Because I’m such a cookie fiend I’ve been meticulously perfecting this recipe to find the right balance of naturally sweet, chewy and totally glow-approved. And I finally found it!

Let’s be real, sometimes you just need a delicious comforting cookie that satisfies your sweet tooth and that also supports your healthy lifestyle.

These vegan oatmeal raisin cookies are everything in one: simple, nourishing and made with just a handful of ingredients that not only make for a delicious cookie, but actually love your body back. They’re filled with wholesome ingredients to fuel your day, and just right amount of natural sweetness to feel like a treat.

If you’re like me, and want to enjoy yummy, healthy food without spending a lot of time in the kitchen then you’ll love these. If a recipe has fancy ingredients or too many crazy steps and a long list of ingredients I totally tune out. It’s like I’m literally incapable of following it. That’s why most of my recipes you’ll see that they’re minimal ingredients, a few simple, easy steps AND delicious, cause that’s the only way I roll (insert winky face lol).

These oatmeal raisin cookies make for the perfect snack when you want to cozy up with a nice warm blanket, a cup of herbal tea and enjoy a moment just for you. Here in Italy our town always shuts down for a couple of hours midday. My husband usually naps along with Billy our Yorkie, and I’ll usually enjoy a nice snack enjoying just being in the present moment. It’s my little daily routine for myself. In the summertime I enjoy these with a nice cold glass of cashew milk, yum!

In case you’re wondering your kids will love these as well. I’ve had them taste-tested and approved by everyone in our village and they passed with flying colors. One ting about Italians they can’t lie when it comes to whether or not they like your food. They’re literally the hardest crowd pleasers in that regard. So trust me if they love them, you will too!

Having healthy, delicious snacks on hand is such a game changer in keep on track for your healthy lifestyle. For me it helps me avoid reaching for junk food that my husband might have on hand. Most people assume that cause I’m such a healthy eater that my husband must be as well. But that’s actually not the case.

I’ll share a little secret with you, but make sure you keep it between us (smiley face). He actually is a huge chocolate fiend. When I clean up the house I find chocolate stored in nooks and crannies of places I would never expect! So, having already made snacks that I love on hand really helps me not give in to easy finds…like the chocolate lol.

Recipe:

  • 1 cup almond flour
  • 1/2 cup oats
  • 1 heaping teaspoon cinnamon
  • 1/4 cup raisins
  • 1/4 cup chopped walnuts
  • 1/4 cup maple syrup or malt rice syrup
  • Pinch of salt
  • 1/2 teaspoon baking soda
  • 3 tablespoons coconut oil

Directions:

  1. Preheat oven to 350°F and line a baking pan with parchment paper.
  2. Combine the almond flour, oats, cinnamon and salt baking soda together in a medium size bowl.
  3. Stir in the coconut oil and  maple syrup mixing together well until the mixture forms a dough.
  4. Fold in the walnuts and raisins and mix in evenly.
  5. Scoop out tablespoon size portions of the dough and roll them into balls and place them onto the parchment lined tray with enough space between them and gently press on them to flatten into discs.
  6. Bake for  11- 12 minutes
  7. Let the cookies cool on the tray for a few minutes before transferring them

Once cooled ( if you can resist eating them all warm!), store them in an airtight container at room temperature for up to 4-5 days, not that you’ll need to these babies are so delicious they’ll probably disappear before you finish cleaning the mixing bowl! You can also keep them in the fridge for extra freshness.
