On a whim I whipped up a quick dessert for myself that literally took two minutes and just three ingredients. I shared the photos of it on Instagram and it was such a hit that I ran straight to the computer to share it with you all. If you love coconuts and creamy desserts this is for you. I used nectarines and peaches but you can use whatever fruit you wish, you really can’t go wrong! Every day that goes by I am happier and happier with eating raw foods! It amazes me how delightful a dessert can be that is sugar-free, gluten-free, no preservative’s and is healthy too. It is just wonderful and so satisfying.
One of my favorite things to drink is coconut water. Coconut water is the liquid found inside the young coconut. You can drink it straight from the fruit getting it fresh with all the nutrients instead of losing them in the pasteurization process, and getting all those preservatives that are added to it. There are so many health benefits from it too. But first here is the recipe. Enjoy!
1 young Thai coconut (1 cup of coconut water, and all the meat inside, it should be about a cup, more is fine too depending on how thick you want your cream).
4 peaches or nectarines (I mixed both)
3 medjool dates, pitted
dash of cinnamon
One of the first things people want to know when I post coconut recipes is how I open them. I have a little secret…WholeFoods store! They sell them, at least by me, with the tops cut off so all you have to do is cut through the coconut meat and pour out the water and literally scoop out with a spoon the flesh. It is that easy.
However, if that is not the case for you, you will need to take a large sharp knife and cut around the base of the top like this:
Once opened, the flesh is jelly like consistency and can just be scooped out.
Pour the coconut water through a strainer and into a high-speed blender add the dates and blend til dates are liquified. Then add the coconut meat and blend on high until rich and creamy. If it’s too thick add more coconut water, but it is supposed to be cream so it should be pretty thick.
Slice the fruit and put into a dessert bowl filling it with the cream. Add more fruit on top and a dash of cinnamon on top.
All I can say is yum yum yumm! Quick, easy and three simple steps!
