With winter here, many people ask me how I eat raw foods and stay warm? Usually when it’s cold out people tend to crave warm, comforting foods and so the idea of eating raw food isn’t appealing. First, I must clarify that a raw diet does not mean cold food. But also, it’s interesting that when you have been on this diet for a while you not only feel better but your body functions much more efficiently and you actually feel less sensitive to cold weather in general (just another great motivating factor to eat raw foods).
One of my favorite things to make are warm soups in my vitamix. It’s wonderful because it warms it up nicely but doesn’t heat it to the point where it loses the life-giving nutritional value.
This particular soup is great because it has a sweet but tangy flavor to it and the ginger has a really great warming effect. I just love it! It actually can be eaten warm or cold as a refreshing soup like on a warm summer day.
6 medium-sized carrots cut in pieces
3 oranges peeled
3 celery stalks cut in small pieces
1 cup coconut milk
1 chunk of ginger (about 1 and 1/2 inch piece)
1/2 onion chopped
Combine all ingredients in the vitamix and purée. Garnish with fresh fennel.
