I am really excited to share another dessert with you that is quick, easy, delish and healthy. It is absolutely scrumptuous! With a mixture of berries, coconuts and dates how could you go wrong? 🙂 It takes less than ten minutes to make, a handful of ingredients and just three easy steps and voila’! I always love to mention that on the raw food diet you can actually eat desserts as your meal. On what other diet can you indulge like that? On the low-fat raw food diet you do not have to count calories, it is the perfect diet for those who love to eat! Who wouldn’t want to have a meal like this and without the guilt? So don’t be bashful dig in!
I usually eat this as my meal. However, if you wanted it as just a desert it would be two servings. This is another great raw, sugar-free, gluten-free and guilt free dessert, nothing processed all whole, organic, fresh ingredients. This is the type of food not only we should be eating but we should be teaching our kids to do the same, and why wouldn’t they love a dessert like this?
I have to apologize that I did not use precise measurements while making this, so I am trying to give you a close idea of what I used. However, it is up to your taste, how much of each berry you like, how thick you like the cream etc. Either way with these ingredients you are sure to have a hit!
1 Young Thai Coconut, meat of (about a cup)
1/2 Cup of coconut water (more or less depending on how thick or liquidy you want the cream)
1 Cup blueberries
1 Cup blackberries
1 Cup strawberries
1/3 Cup walnuts (soaked overnight, rinsed and drained)
1 1/3 Cup Medjool dates, pitted (about 15 dates)
1 Dash of cinnamon
To open up a young Thai coconut:
With a large knife cut a whole out at the top like this:
It usually has a pointed tip at the top and you can just cut around the base of it. If you have a Wholefoods nearby you can buy them there with the top already cut off, which makes it even easier. Then pour the water through a strainer into a glass and scoop out the flesh with a spoon.
To make the coconut cream:
Blend in a blender the coconut meat and at least 1/2 cup of coconut water, adding more until desired consistency.
To make the crumble:
In a mini food processor blend the walnuts until coarsely chopped. Note: Make sure not to over process them, you want them coarse not fine. Then add a cup of dates and cinnamon mixing until becomes a sticky dough.
To make strawberry sauce:
Blend the strawberries with the rest of the dates in a blender until it is a sauce consistency.
In a 2 medium size glasses layer the crumble, cream and berries to your liking.
Then cover with strawberry sauce and more coconut cream. Top with berries of choice.
