Lately I’ve been dabbling around with different ideas for new recipes trying to be creative. Every time I go to the farmers’ market there are a wide variety of vegetables, some that I never use, so I have decided to try a different vegetable each time. This time was cauliflower’s turn. Cauliflower is an excellent source of fiber, vitamin C, omega 3 fatty acids (which help decrease inflammation) and vitamin K. So I decided to go ahead and give it a try. I have to admit I wasn’t a big fan of it… until now! I was really pleased, and what I like about this salad is that it’s easy to pack in a container and take it with you to work or on the go.
1 Head of cauliflower
1 Cucumber peeled
2 Tomatoes (I added 1 yellow and 1 red just to add a little color)
1 Handful of parsley
1 Avocado
Juice of 1/2 lemon
Olive oil
Several fresh leaves of basil
Shred cauliflower in food processor or vitamix.
Chop in small pieces cucumber, parsley and tomatoes. Mix together in a bowl and add small amount of olive oil and lemon juice. Garnish with basil leaves and sliced avocado. Enjoy!
Looks and sounds delicious. I am going to make this today with dinner.
Wow…this was delicious. I add chopped Kalamata olives and chopped red bell pepper. YUM!!!
